This is Black Honey “18 Rabbit” coffee, a honey-processed version made with the slowest drying method, producing beans similar to those of naturally processed coffee. Fruity, sweet, and wine-like fermentation notes give it a unique flavor. Unlike naturally processed coffee, this coffee has more body, vibrant acidity, and a balance of darker nuances. Flhor Zelaya Ontreras set out to change the coffee culture in her region. Since starting her first farm at the age of five, she has focused on organic farming. Now, as an adult, Flhor is committed to the total sustainability of the land. She obtained biodynamic certification, which guarantees that her crops are not only free of pesticides and chemical fertilizers, but also that coffee cultivation does not disrupt the ecosystem, but rather works in harmony with it.
The name of this coffee, “18 Rabbit,” pays homage to Honduras’ rich cultural heritage, evoking the figure of Uaxaclajuun Ubʼaah Kʼawiil, the thirteenth ruler of the ancient Mayan city of Copán. Popularly known as “18 Rabbit” due to the interpretation of the glyphs of his name on the stelae, this king was a great patron of the arts and responsible for the most beautiful and detailed monuments at the archaeological site, known as the “Forest of the Kings.” Just as the Mayan ruler carved history in stone, the Zelaya Ontreras family carves quality into every bean, cultivating these lands in Marcala with a deep connection to their ancestral roots and a respect for nature.
She manages an all-female cooperative and has now partnered with Cafe Kreyol and Cafe Femenino, to begin an entrepreneur program for indigenous women in the mountains.
